How making popcorn works
No matter which machine you choose - physically, the same little miracle happens with every kernel.
- Moisture inside the kernel Every popcorn kernel locks in about 14% water inside its starchy core - sealed by a hard, nearly waterproof hull.
- Heating to about 356°F Whether it's a kettle, hot air, or a hot plate: once the kernel reaches this temperature, the trapped water flashes into steam.
- The pressure builds The steam can't escape through the hull - pressure inside the kernel builds up to around 130 psi, far more than in a car tire.
- The hull bursts Eventually the hull can't withstand the pressure anymore and bursts open instantly. The foamed-up starch inside puffs outward and sets immediately into the familiar flake.
