In short: Butterfly kernels pop irregularly with thin "wings": lots of surface area, ideal for salt and butter, but fragile. Mushroom kernels pop compact and round, so they hold caramel, chocolate, and glazes without crumbling apart. They barely differ in flavor - it's purely a structure decision.

"Hull-less" doesn't mean hull-free
Strictly speaking, the term is marketing: every popcorn kernel needs its hull, or it couldn't pop at all - without the pericarp, no pressure builds up. What it actually means is that this variety's hull is thinner and breaks into especially small pieces when it bursts. Those pieces are then less likely to get stuck between your teeth. But no popcorn in the world is truly hull-free.

How to tell the types apart before they're even popped
Butterfly kernels are usually a bit bigger, slightly pointed, and look more angular. Mushroom kernels are rounder and more evenly shaped - they look more like little pearls. When in doubt, check the packaging: mushroom kernels are almost always explicitly labeled as such, because they're a specialty product. If nothing's noted, it's practically guaranteed to be butterfly.
That's also why a lot of people know mushroom popcorn without ever knowingly buying it: it's in almost every store-bought bag of caramel or chocolate popcorn.
Why caramel tears butterfly kernels apart
Making caramel corn means tossing, stirring, and often finishing it in the oven. Butterfly kernels' thin wings break off in the process - you end up with a lot of sweet crumbs at the bottom of the bowl instead of whole pieces in the bag.
Mushroom popcorn has no such weak points. Its closed, round shape gives the coating an even surface to cling to and comes through the stirring almost unscathed. If you're gifting or shipping popcorn, this type is hard to avoid.
Can you mix both types?
Yes - both pop at the same temperature, so you can put them in the same pot or machine without issue. It's usually not worth it, though: mushroom brings no benefit to salty recipes, and in sweet recipes the butterfly portion crumbles apart anyway, leaving you with crumbs in the bowl again.
The more honest recommendation: keep a bag of each in your pantry and pick based on the recipe.
Does the kernel color matter?
Barely. Yellow corn tends to taste a bit bolder and gives you slightly golden popcorn, while white corn feels milder and more delicate. But the difference is much smaller than the one between butterfly and mushroom - and with colorful decorative corn, the color only lives in the hull anyway, which pops off.
