Kettle Corn

The classic from county fairs and carnivals: sweet and salty at the same time.

Ingredients

  • 1/2 cup popcorn kernels
  • 3 tbsp neutral oil
  • 3 tbsp sugar
  • 1 tsp salt

Instructions

  1. Heat the oil in a large pot.
  2. Add the sugar and kernels at the same time - this is the key difference from regular popcorn, letting the sugar caramelize right on the kernel.
  3. Put the lid on and shake the pot constantly so the sugar doesn't burn.
  4. Once popping noticeably slows down, take it off the heat, sprinkle with salt right away, and toss.
  5. Spread out on parchment paper so the pieces don't stick together as they cool.

Tips & Variations

  • The most important trick: shake constantly the whole time it's popping, or the sugar will burn on the bottom of the pot.
  • Classic fairground serving size: serve in paper bags for an authentic feel.
