Mistake 1: too many kernels at once

The classic. A thick layer of kernels never pops evenly: the bottom kernels sit right against the heat and burn, while the ones on top stay cold and hard. The result is half burnt, half unpopped.

The fix is simple: cover the bottom of the pot in a single layer only. Need more? Run two batches back to back instead - it barely takes longer and gives you noticeably more finished popcorn.

Mistake 2: the wrong temperature

Too much heat burns the popcorn before it's fully popped; too little lets the kernels dry out instead of bursting them open. Either way, you end up frustrated.

The test-kernel trick solves this with no thermometer needed: heat two or three kernels with the oil, and once they pop, add the rest. That way you hit the right window every time.

Mistake 3: the wrong or too-old kernels

Only real popping corn pops reliably - and only as long as it still has enough residual moisture. Kernels that are too old and dried out stay hard, and so does sweet corn or regular eating corn.

Prop the lid slightly open, or use one with a steam vent. This one small habit is often the difference between soggy and perfectly crispy popcorn.

Mistake 5: seasoning or sweetening too early

Adding salt or sugar to the pot before popping sounds convenient, but it usually backfires: the sugar caramelizes out of control and burns, and the salt spreads unevenly.
