The cooldown trick

The most common storage mistake is putting popcorn into a container while it's still warm. The leftover heat condenses into water on the inside walls and makes the popcorn chewy from the inside out - even though the container is airtight. Always let it cool completely before sealing it up. Why popcorn turns chewy

Popcorn is naturally extremely dry and pulls in moisture easily - that's exactly what makes it so vulnerable. Left out in the open, it absorbs water from the air, and its crispy structure turns soft and chewy. That's not spoilage in the strict sense, just moisture absorption.

A second, common at-home cause is packaging it too soon: put still-warm popcorn into a container, and the leftover heat condenses into water on the inside walls, making the popcorn chewy from within. Always let it cool completely before sealing it up.

Storing finished popcorn properly

Raw kernels are much less fussy and keep for many months to over a year with proper storage. All that matters is holding onto their roughly 14% moisture content - that's exactly what keeps them poppable.

Store them airtight, in the dark, at room temperature - for example, in a screw-top jar. Not in the fridge: the dry fridge air slowly pulls moisture out of the kernels over time, and overly dry kernels pop poorly - one of the main causes of popcorn not popping.

Can you freeze popcorn?

Freezing finished popcorn is possible, but rarely worth it - the texture usually suffers after thawing. Raw kernels handle cold just fine, but they already keep so long that freezing them is rarely necessary anyway.

Test for freshness instead of checking the date

With raw kernels, the best-by date says little about actual poppability - moisture content is what matters. The most reliable test is a small pop test: pop a handful of kernels and see how many stay behind.

If almost everything pops big and fluffy, the kernels are in great shape. If a lot stays hard, or the pops come out small, they're too dry - the water-in-a-jar trick or fresh kernels can help. That way you're going by actual behavior instead of a printed date.
